I ended up booking a last minute flight home for the weekend. My birthday was on Saturday, and since it had been a very difficult week, I needed to be around my family. I like to pretend I’m independent, but sometimes I really just need a hug from Mom and Dad!
When mom asked me what I wanted for my birthday dinner, the answer was easy. Spaghetti! Mom’s spaghetti is, in my unbiased opinion, the best. I’ve asked her to give me her recipe before, but she’s never been able to. She cooks by sight and smell, not by recipes. I decided this was a great opportunity to help her and document what she does, so I can recreate the magic.
- 2 tablespoons olive oil
- 1/2 onion, chopped
- 1/2 green pepper, chopped (optional)
- 1 lb ground beef
- 1 lb high quality Italian sausage
- 1- 28 oz can tomato puree
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons dried basil
- 1 teaspoon chili powder
- 1/2 cup red wine
- salt and pepper, to taste
Heat the oil in a large skillet over medium-high heat. Add the onions and peppers and saute until soft.
Add the meats. Cook, stirring occasionally, until meat is brown.
Stir in the tomato puree and spices. Reduce heat to low, and allow the sauce to cook down for 1-3 hours. If cooking for a long time, add water.
Add in the red wine and allow to cook another 30 minutes. Season with salt and pepper, as needed. Remove from heat.
Serve over spaghetti and top with Parmesan cheese.
We roasted some broccoli and red peppers to have on the side. Roasted broccoli is a favorite of mine, but I always end up setting off the smoke alarm when I roast vegetables in my apartment! I happily took advantage of the well ventilated kitchen to make my favorite, simple vegetable dish. We opened up a bottle of Cabernet Sauvignon to complete the meal. So good!
For dessert, I requested a flourless chocolate cake. Mom found this Flourless Chocolate Torte in a Williams Sonoma cookbook. It was decadent and delightful.
A trip home was just what I needed! It was so nice to be around my parents. I’ve finally figured out what makes Mom’s spaghetti so special. A hearty dose of TLC!
