“Cooking requires confident guesswork and improvisation”

Cooking requires confident guesswork and improvisation– experimentation and substitution, dealing with failure and uncertainty in a creative way - Paul Theroux, Sir Vidia’s Shadow: A Friendship Across Five Continents

I’ve written about cooking and failure in the past, and it continues to be one of my favorite things about the time I spend in the kitchen. Perhaps more than any other experience in my life, failing in the kitchen never seems like a big deal, but rather, just part of the journey.

On Mondays I will be sharing some of my favorite words of wisdom about food, cooking, food writing, and coming together around the table. If you have suggestions for quotes to feature here, please let me know.
